Cranberry Orange Muffins 

Ingredients:
 1 c. fresh cranberries, chopped
1/4 c. sugar
1 orange
1 T. unsalted butter, softened
1/3 c. orange juice
1 egg
1-1/2 c. flour
1/2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt  


Toss cranberries and 1/4 c. sugar; let stand 15 minutes. Thinly slice and chop yellow part of orange peel (we grated). Blend with chopped orange segments (Mom processed in the food processor), softened butter, orange juice, and egg.  

Stir together flour, 1/2 c. sugar, baking powder, soda and salt; add to orange mixture and stir just until dry ingredients are moistened. Stir in cranberry mixture. Spoon batter into greased muffin tins, filling them 2/3 full. Bake at 400* for 15-20 minutes.  

Yield: 12 muffins
