Ingredients :
16-oz. carton cottage cheese
10-oz. pkg. frozen chopped spinach, thawed and drained
8 oz. Cheddar cheese, shredded
3 eggs, beaten
1/4 c. butter, melted
3 T. all-purpose flour
salt blend to taste
Combine all ingredients. Pour into a 9" pie pan. Bake at 325 degrees for one hour. Cool slightly and cut into wedges.
Mom and I usually eat this one for lunch...but I'll bet it'd make a really good brunch dish, with sweetrolls and a side of fruit salad. :)
